Ace Combat 7 has no VR on PC and is exclusive on the PSVR and even that doesn’t have full VR support. It has full VR support on PC which means you can play the whole game in VR. If you are doing VR go with Project Wingman. Ace combat 7 in my opinion does a more realistic rendering of explosions. But explosions are to bright and Michael Bay level over the top in Project Wingman and the post processing in the game is horrendous. Project wingman has better particle effects like missile trails and aircraft trails as they stay visible longer while Ace Combat 7 missile trails disappear very quickly and don't have aircraft trails.Ace combat has been known to many to have one of the best soundtracks in the gaming industry so that isn't surprising Ace combat 7 sound design and soundtrack is much better than Project Wingman.Ace Combat 7 has better story and voice acting than Project wingman.Also enemy anti air units like AA guns and SAM's are more deadlier in Ace combat 7 But in terms of enemy AI, Ace Combat 7 is much better than Project Wingman. But they did upgrade them in the DLC missions.
The devs downgraded the ally AI from AC6 which makes them practically useless. Project Wingman has better ally AI than AC7.
Now there are some other details that you haven't brought up: If I had had to pick, Project Wingman is easier because it doesn't have mission time limits and isn't hardcore on completing the objectives. Ace combat 7 has a more objective based level design while Project wingman is more open. This one is hard to say because as an Ace combat veteran these games tend to be a piece of cake.
Ace combat 7 on the other hand has a more lighter aircraft handling and can you can do both post stall maneuvers and G turns. The game can do post stall maneuvers but can't do G turns. They both play exactly the same way but the difference is that Project Wingman has a much heavier aircraft handling.
